As a result, they will much more quickly and effectively sharpen a dull knife, while also being capable of realigning a rolled edge, as discussed above. The oval surface again increases the surface area, increasing the speed of sharpening. The interrupted surface allows the small amount of metal removed during sharpening to collect in the holes, keeping it off the sharpening surface, which again helps speed the sharpening process by keeping the knife’s edge in contact with the sharpening surface.
