Steel rods realigns the knife edge but do not actually sharpen. A knife’s edge will start to roll over when used on hard cutting surfaces or when it impacts bone, for example. A steel rod will straighten the rolled edge, which will improve the cutting ability of the knife. Actual sharpening requires removing steel from the knife blade. A steel rod is not abrasive enough to remove steel.
